Foodie Friday: Sinclair's New Chef's Tasting Menu

Ready to try something unique? Sinclair's Restaurant at West Baden Springs Hotel has unveiled a new Chef's Tasting Menu. Featuring six seasonally inspired dishes, each small plate adds up to a full dining experience. Guests also have the option of ordering wine with the Chef's Tasting Menu, with a different wine complementing each course. It is recommended the entire party order the Chef's Tasting Menu to fully experience each course together.

Sous Chef Allison Lindsey built the menu with the goal of bringing several new flavors and small plates into a full six-course meal. Starting with lighter fare and working up to two succulent main courses and finishing with a delectable medley of sweets, Sinclair's new Chef's Tasting Menu is not to be missed.
Let's dig into a preview of the current tasting menu:

Course One
 Oven Warmed Goat Cheese | Romesco (nut and red pepper-based) Sauce, Castelvetrano Olives and House-Made Grilled Breads. Served with Snoqualmie Riesling from Columbia Valley, Washington.

Course Two
 Sweet Pea Bisque | Creamy Fennel, Tender Ham and Pea Shoots. Served with Duckhorn Decoy Chardonnay from Sonoma County, California.

Course Three
 Roasted Beet | Crème fraîche (similar to sour cream), Micro Mesclun (small, young greens), Confit Lemon Peel, Sea Salt, Cracked Pepper and Lemon Infused Olive Oil. Served with St. Francis Cabernet Sauvignon from Sonoma County, California.

Course Four
 Alaskan Black Cod | Asparagus, Fumet (fish stock), Giant White Mountain Beans and Pancetta Gratin. Served with Handcraft Chardonnay from California.

Course Five
 Harissa Rubbed Lamb Loin | Verde Rice, Kumquat Marmalade, Pomegranate Molasses and Sunflower Seeds. Served with Rodney Strong Pinot Noir from Russian River Valley, California.

Course Six
Medley of Sweets | Three layered desserts perfectly portioned in 2-ounce glasses including Chocolate Caramel, Lemon Cream and Raspberry Cheesecake.
