Foodie Friday: Chocolate Festival

"From bean, to bar, to buffet. That is this year's Chocolate Festival." French Lick Resort's pastry team is preparing a feast for the eyes and the stomach, where you can find a smorgasbord of chocolate-dipped confections, impressive desserts, themed cocktails and everything in between.

This year marks the 10th anniversary of the Chocolate Festival celebrating the world's most popular sweet treat, and we're doing so in 1920's style this year for an over-the-top celebration of all things....you guessed it, chocolate. Pastry Chef Dalyn Roney wants guests to "come prepared for more chocolate offerings than ever before at this annual event — chocolate-dipped flowers, edible coffee cups filled with chocolate mousse, and more fun stuff you can eat!" Come dressed in theme or just as you are to treat yourself to an afternoon of decadence. Sip, snack and swing as you delight in these hand-crafted treats.

Here are a few things you can expect to see. Every year our pastry team collaborates and creates new additions, so the exact lineup will be slightly different than what is pictured here from last year's Chocolate Festival.

Preparations for this event begin months ahead, firming general plans like location, setup and for this year, theme. Actual food prep begins about a couple weeks in advance. French Lick Resort's pastry team dips, dusts, cuts, designs and bakes so that the end products will be memorable creations with the perfect amount of finesse.

Dalyn previewed some of the treats that will be featured at this year's Chocolate Festival during Kitchen Live in January as she demonstrated French Macarons (which will be available at the chocolate festival, shaped as hearts).
Expect to see the classics like chocolate-dipped truffles, cookies and desserts at this year's festival, and also learn (as in tasting) how chocolate comes to complete fruition (from the cocoa pods, nibs and beans to the final mouth-watering product).
Other French Lick Resort chefs assist during last year's massive chocolate fountain setup. You can always expect the fountain of cascading chocolate every year, as it's a staple of the Chocolate Festival experience. Complete with fruit, cookies and snacks to dip with!

Dalyn explained that "our chocolate festival is more than a buffet, it's an experience with 'all the things' chocolate, but it's more than just chocolate, it's a whole spectrum of flavor!"
